Herbert Girl's Big Weekend

Haylee lost her first tooth today. Unless you count the molar her dentist pulled last fall, which I don't. It's been loose for weeks and we've been wiggling it every day. It was so close to coming out last night. I asked her if she wanted me to pull it, but she said not yet. But when she woke up this morning, it was gone. We search her room and finally found it. It's now safely under her pillow waiting for the Tooth Fairy tonight. She's so stickin' cute with her missing tooth smile. I love it!
 I ran my first half marathon yesterday. It was hard, but I'm glad it did it. Mike and the kids where at the finish line cheering me on. I had no idea I would get so emotional but when I saw how excited Haylee was when she saw me, I teared up a little bit. Sure do love that girl.

Confession

I have a confession.

My sweet neighbor was nice enough to take care of some things at our house while we were in Idaho last week. As a thank you, I made her my favorite brownies. Unfortunately, we ate them all before I took them over to her. They're that delicious.

I have another confession. When I say "we" ate them all, I really mean I ate them all.

What good is loosing 20+ pounds if you can't enjoy putting it all back on??

Here's the recipe. I believe it is from the BYU Creamery. They are so fudgey and yummy. Try them. Don't plan on sharing.


BYU Mint Brownies

Brownies:
1 cup butter
1/2 cup cocoa
2 Tbsp honey
4 eggs
2 cups sugar
1 3/4 cups flour
1/2 Tbsp baking powder
1/2 tsp salt
1 cup chopped nuts (optional)

Mint Icing:
5 Tbsp butter
dash salt
3 Tbsp milk
1 Tbsp corn syrup
2 1/3 cups powdered sugar
1/2 tsp peppermint extract
green food coloring

Chocolate Icing:
6 Tbsp milk
6 Tbsp butter
1 1/2 cups sugar
1 cup chocolate chips
dash vanilla

Brownies-Melt butter and mix in cocoa. Allow to cool. Add honey, eggs, sugar, flour, baking powder and salt. Mix well. Add nuts. Pour into greased 9 x 13 pan. Bake at 350 for about 30 mins. Cool.

Mint Icing-Soften butter, add salt, corn syrup and powdered sugar. Beat until smooth and fluffy. Add mint extract and food coloring. Mix. Gradually add milk until slightly thinner than cake frosting. Spread over cooled brownies. Put in freezer to stiffen frosting.

Chocolate Icing-Combine milk, butter and sugar in saucepan. Bring to boil. Allow to cook at rolling boil for 30 seconds. Remove from heat. Add chocolate chips and vanilla and stir until melted. Cool slightly and pour over brownies.
